Ils re\u00e7oivent une cat\u00e9gorie de qualit\u00e9 bas\u00e9e sur la tendret\u00e9, la jutosit\u00e9, et la saveur. Les cat\u00e9gories de rendement repr\u00e9sentent une pr\u00e9diction du pourcentage de rendement des coupes au d\u00e9tail sans os provenant des quatre coupes primaires (ronde, longe, c\u00f4te et bloc d\u2019\u00e9paule). Une carcasse de b\u0153uf est class\u00e9e par un classificateur certifi\u00e9 et d\u00e9sign\u00e9 seulement apr\u00e8s qu\u2019elle re\u00e7oit une estampille d\u2019inspection de viande par l\u2019ACIA. <\/p>\n<p>Que signifie ces cat\u00e9gories de qualit\u00e9 d\u2019un point de vue du consommateur? Les cat\u00e9gories du classement de b\u0153uf mesurent plusieurs caract\u00e9ristiques qui indiquent la qualit\u00e9 g\u00e9n\u00e9rale de la viande. <\/p>\n<p>La classification vise \u00e0 assurer aux consommateurs un produit am\u00e9lior\u00e9 avec une uniformit\u00e9 et une qualit\u00e9 gustative pr\u00e9visible selon chacune des cat\u00e9gories de boeuf. Au Canada, la cat\u00e9gorie la plus haute pour le b\u0153uf est Canada Prime, suivi par Canada AAA, Canada AA, et Canada A. <\/p>\n<p>Le classement n\u2019est pas obligatoire, mais la cat\u00e9gorie est le crit\u00e8re g\u00e9n\u00e9ralement accept\u00e9 pour \u00e9tablir la valeur marchande. La classification sert \u00e0 regrouper les carcasses en groupes uniformes, selon leur qualit\u00e9, leur rendement et leur valeur commerciale, afin de faciliter la mise en march\u00e9 et les d\u00e9cisions de production. <\/p>\n<p>L&rsquo;Agence canadienne de classement du b\u0153uf (ACCB) est une corporation priv\u00e9e de but non-lucratif qui est accr\u00e9dit\u00e9e par l\u2019Agence canadienne d\u2019inspection des aliments pour effectuer le classement des carcasses du b\u0153uf au Canada. Les normes des cat\u00e9gories du b\u0153uf or \u2018exigences\u2019 sont g\u00e9r\u00e9es par le Comit\u00e9 permanent sur les exigences relatives \u00e0 la classification des animaux d\u2019\u00e9levage qui est supervis\u00e9 par le conseil d\u2019administration de l\u2019ACCB. Ces exigences sont habilit\u00e9es par une incorporation par renvoi dans le R\u00e8glement sur la salubrit\u00e9 des aliments au Canada (RSAC) comme \u00e9tabli par l\u2019Agence canadienne d\u2019inspection des aliments.  <\/p>\n<p>Comme vous pouvez le voir, il y a beaucoup \u00e0 faire quand il s&rsquo;agit de classifier le b\u0153uf.<\/p>\n<p><strong>Alors, qu&rsquo;est-ce que c&rsquo;est le b\u0153uf non-class\u00e9?<br \/><\/strong>\u00c7a veut dire que vous recevez essentiellement un produit qui a \u00e9t\u00e9 inspect\u00e9 par l\u2019ACIA et ce qui respecte le RSAC. Le produit est sans danger pour la consommation et il est comestible, mais vous ne savez pas n\u00e9cessairement la qualit\u00e9 du produit.<\/p>\n<p>R\u00e9cemment, il y a eu des articles dans le media et des publications sur les r\u00e9seaux sociaux qui ont comment\u00e9 l\u2019importation de b\u0153uf non-class\u00e9 du Mexique au Canada.<\/p>\n<p>Tout produit de viande (class\u00e9 ou non-class\u00e9) vendu en Canada doit d\u2019abord \u00eatre inspect\u00e9 par l\u2019Agence canadienne d\u2019inspection des aliments (ACIA). La salubrit\u00e9 des aliments en Canada a des normes \u00e9lev\u00e9es qui sont reconnus internationalement. syst\u00e8me canadien de classification a \u00e9t\u00e9 la mise en \u0153uvre du syst\u00e8me de classification par vision par ordinateur Technologie e + v (technologie VIA: VBS 2000, E + V GmbH, Allemagne). Les cam\u00e9ras DEL d&rsquo;origine du syst\u00e8me ont depuis \u00e9t\u00e9 remplac\u00e9es par des cam\u00e9ras num\u00e9riques (GigE). La technologie de classification par vision par ordinateur permet d&rsquo;effectuer plusieurs mesures des param\u00e8tres de rendement et de qualit\u00e9 plus rapidement que ce ne serait possible en utilisant des approches manuelles. De plus, le format num\u00e9rique des donn\u00e9es des carcasses permet de stocker ces informations dans des bases de donn\u00e9es telles que BIXS.   <\/p>\n<p>Il s&rsquo;agit de la premi\u00e8re avanc\u00e9e majeure du syst\u00e8me canadien depuis l&rsquo;introduction de la cam\u00e9ra du syst\u00e8me de vision par ordinateur (CVS) en 1999. Apr\u00e8s la mise en \u0153uvre du RSAC en 2019, toutes les approbations et supervisions de la technologies utilis\u00e9e pour assister le classement est devenu le domaine de l\u2019Agence canadienne de classement du b\u0153uf. La technologie permit une pr\u00e9cision am\u00e9lior\u00e9e de classement sous les r\u00e8glements de classement actuels.  La cat\u00e9gorie finale est toujours supervis\u00e9e \/ approuv\u00e9e par un classificateur certifi\u00e9 par l&rsquo;ACCB et d\u00e9sign\u00e9 par l&rsquo;ACIA, qui peut, si n\u00e9cessaire, annuler les cat\u00e9gories de classement de la cam\u00e9ra si elles ne sont pas exactes.<\/p>\n<p>Au Canada, l\u2019instrument de classement est une machine stationnaire avec lequel on prend des photographes et analyse la zone entre le 12e et 13e c\u00f4tes des deux c\u00f4t\u00e9s de chaque carcasse lorsqu\u2019elle passe devant la machine sur un rail mobile. \u00c0 l&rsquo;heure actuelle, la cam\u00e9ra informartis\u00e9e de classification mesure la cat\u00e9gorie de gras, la largeur de l\u2019oeil de longe (rib-eye), la longueur de l\u2019oeil de longe (rib-eye) et calcule un rendement des coupes au d\u00e9tail, fournissant ainsi une cat\u00e9gorie de rendement et un niveau de persillage qui \u00e9quivaut \u00e0 une cat\u00e9gorie de qualit\u00e9. Une fois approuv\u00e9e, des audits et une surveillance r\u00e9guli\u00e8re de la technologie auront lieu pour assurer son exactitude et sa conformit\u00e9, tel qu&rsquo;indiqu\u00e9 dans le contrat entre les \u00e9tablissements de transformation de la viande et l\u2019Agence, Annexe B-I \u00abExigences pour la classification assist\u00e9e par ordinateur\u00bb.<\/p>\n<p>\u00c0 l&rsquo;heure actuelle, quatre \u00e9tablissements, au Canada, ont un rail mobile &#8211; JBS (anciennement XL Beef) \u00e0 Brooks, Cargill High River, Cargill Guelph et Harmony Beef \u00e0 Balzac. Tous ces \u00e9tablissements ont install\u00e9 l&rsquo;instrument, mais l&rsquo;\u00e9tablissement JBS a \u00e9t\u00e9 la premi\u00e8re et elle continue d&rsquo;\u00eatre la seule \u00e0 l&rsquo;utiliser pour la classification des carcasses de b\u0153uf. Alors que les autres \u00e9tablissements ont utilis\u00e9 la technologie \u00e0 des fins \u00abinternes\u00bb au cours des derni\u00e8res ann\u00e9es, d&rsquo;autres \u00e9tablissements sont, pr\u00e9sentement, \u00e0 diff\u00e9rents stades de l&rsquo;adoption des syst\u00e8mes de vision par ordinateur comme aide \u00e0 la classification dans leurs \u00e9tablissements.<\/p>\n<p>La technologie est objective et \u00e9value le persillage sous la m\u00eame lumi\u00e8re et \u00e0 la m\u00eame distance de l&rsquo;oeil de longe sur la base de calculs minutieux de pixels rouges et blancs dans le muscle trac\u00e9.
