GRADE STAMPING
The physical marking of the carcass with the grade is done as clearly and neatly as possible so that the grade name is easily recognizable.
GRADE LABELING
When beef, bison or veal is fabricated into wholesale and/or retail cuts, the grade label on the box must correspond to the carcass grade stamp. Although the expression “or higher” is also allowed if the box contains more than one of the Canada A, Canada AA, Canada AAA, and Canada Prime Grades (i.e. Canada AA or higher).

MEET OUR GRADERS
The CBGA is proud of the high standards and qualities of carcass grading by it’s team of certified graders in Canada. We will be regularly featuring members of the Grading Team and invite you to check back.
Supervisor/Grader – Gary Hasson
Gary has been involved in livestock grading since 1979. He was raised on a mixed farming operation in Ontario and still resides on the family farm. Gary is one of the veterans of the Agency and is a continual ambassador for the Canadian Grading System. He and his grading staff do their utmost to accommodate any special requests for additional carcass information, including beef grading tours, seminars and are always willing to discuss carcass grade and yield results.
Gary is our Ontario Regional Supervisor. This position is responsible for the consistency in application of the Livestock Carcass Grading Regulations and the maintenance of delivery of beef, veal and bison carcass grading to plants under contract with the Agency within the designated region.
CERTIFIED CBGA GRADERS
Quality and yield grades are assigned to carcasses by a Canadian Beef Grading Agency (CBGA) certified grader. Each grader must successfully complete a comprehensive training program. CBGA Certified and CFIA Designated graders are regularly audited by CBGA Regional Supervisors and the CFIA National Livestock Carcass Grading Specialist.
